Savoring the Flavors of Tuscany: Tuscan White Bean Soup Recipe

I wanted to post this recipe while there are still a few more cool nights to enjoy a warm soup- this is delicious leftover so don't worry if it makes too much! The flavors will continue to mesh and it only gets better!


Ingredients:

3 Tablespoons butter

1 onion, finely chopped

2 garlic cloves, minced

2 lbs chicken, cooked and shreddedounces chicken broth

14ounces chicken broth

2 cans Great Northern beans, washed and drained

1 can green chilis

1 teaspoon oregano

1 teaspoon crushed red pepper flakes

1 teaspoon ground pepper

1/2 teaspoon salt

2 teaspoons parsley

1 teaspoon cumin

1/2 teaspoon sage

1 cup sour cream

1 cup heavy whipping cream


Instructions:

  1. In a large pot over low heat, saute onion, garlic, and shredded chicken in butter.

  2. Add in broth, chilis, beans, and spices and bring to a boil. Reduce heat and simmer for 1 hour.

  3. Add in sour cream and whipping cream and simmer for 30 additional minutes.
